<p><em>Ingredients:</em><br />1 package&nbsp;<strong><em>Dreamfields</em></strong>&nbsp;Elbows<br />1 tablespoon olive oil<br />1/4 cup chopped white onion<br />1 clove minced garlic<br />1 tablespoon chopped fresh parsley<br />1 1/2 cups half &amp; half<br />1 cup 1% milk<br />1 teaspoon each salt, pepper and nutmeg<br />Nonstick cooking spray<br />1 1/2 cups fontina cheese, shredded<br />1 cup non-fat cheddar cheese<br />2 tablespoons Parmesan cheese</p>
<p><em>Directions:</em></p>
<ol>
<li style="list-style-type: decimal; list-style-position: outside; list-style-image: initial;">Heat oil in 12-inch skillet over medium heat; saut&eacute; onion, garlic and parsley for 3 to 5 minutes, stirring occasionally. Add half &amp; half and milk, season with salt, pepper and nutmeg. Cook for 10 minutes, stirring occasionally.</li>
<li style="list-style-type: decimal; list-style-position: outside; list-style-image: initial;">Meanwhile, cook pasta according to package directions. Pre-heat oven to 425-degrees F. Spray a 9&times;13-inch casserole baking dish with nonstick cooking spray.</li>
<li style="list-style-type: decimal; list-style-position: outside; list-style-image: initial;">Toss pasta and sauce together. Add fontina and cheddar cheeses; stir until well blended and pour into casserole dish. Top with Parmesan.</li>
<li style="list-style-type: decimal; list-style-position: outside; list-style-image: initial;">Bake uncovered for 20-25 minutes or until golden brown. Let cool for 5 minutes before serving.</li>

<p>I know, I know, diabetics and cake do not sound like a good match. However, my cousin Peggy who has been a diabetic for many years has taken her Grandmothers fabulous Strawberry cake recipe and adapted the ingredients to suit low fat and low carb requirements. Her Grandmother has been gone since 1987 but her recipes live on.  Miss Ruby as I called her made the cake for any family occasion, holidays etc.  Miss Ruby was a very colorful woman and outlived 3 husbands. She was a crackerjack as the old folks use to say. Yikes I am getting to be one of those old folks myself.</p>
<p>My aunt Dot used to make a Coconut cake for the same family celebrations.  I will post that recipe in a few weeks My cousin adapted it for us as well.  Peggy is one of the best cooks I know and has helped me understand how to modify many of my favorite recipes. The calorie count for Miss Ruby&#8217;s cake is somewhere around 350 for a small slice. Here it is:</p>
<p><strong> Mama Ruby&#8217;s Strawberry Pineapple Cake</strong></p>
<p><strong> </strong></p>
<p><strong> </strong></p>
<p>Butter two 7” or 8” cake pans and preheat oven to 375 degrees</p>
<p>1 1/2 cups whole wheat flour</p>
<p>1 1/2 cups unbleached white flour</p>
<p>4 ½ tsp baking power</p>
<p>¼ tsp salt</p>
<p>1 pkg sugar free strawberry Jell-O</p>
<p>Cream together</p>
<p>6 T butter</p>
<p>1 cup sugar</p>
<p>1 tsp vanilla</p>
<p>Beat in, one at a time</p>
<p>4 eggs</p>
<p>Then add</p>
<p>2/3 pkg frozen, unsweetened strawberries or 1 ½ cup fresh strawberries, sliced</p>
<p>¾ Cup crushed pineapple—well drained (Use unsweetened in pineapple juice)</p>
<p>Beat until fluffy. Add alternately with the flour mixture</p>
<p>Spread in pans and bake 25-30 minutes.  Cool 1-2 hours.</p>
<p>Slice both layers, horizontally.</p>
<p>Fill 3 layers, then frost top layer.</p>
<p>Filling:</p>
<p>16 oz Greek yogurt (or sour cream for more calories and fat)</p>
<p>½ cup crushed, unsweetened pineapple (well drained)</p>
<p>1 cup powdered sugar</p>
<p>1 cup Splenda</p>
<p>Add strawberry slices on top of filling before placing next layer on top.</p>
<p>Frosting :</p>
<p>1 box powered sugar (could substitute ½ splenda)</p>
<p>1/3-pkg strawberries (or ½ cup sliced fresh strawberries)</p>
<p>3-4 T butter</p>

<p>Just a short post today. I made the Turkey meatloaf for friends from the UK on Saturday. As it was really hot I did not want to turn on my main oven, I decided to use my small toaster oven. I realized that the pan I planned to use would not fit into the oven. So, I found some muffin tins, sprayed them with PAM and filled each with the meatloaf mixture. The cooking time is much shorter. I cooked them for 20 minutes then added the sauce to the top then broiled them for about 5 minutes. They were perfect, juicy and everyone thought they were so clever and cute. I also made a low fat, low carb version of Macncheese. I will post that recipe soon.</p>

All diabetics, no matter if you are Type 2 or Type 1, are ruled by the numbers on the glucose meters and the accumulated blood sugar readings and the report from your doctor.</span></p>

Currently my BMI is down to 26, my blood pressure and cholesterol are normal and to date have lost 60 pounds.</span></p>

I am looking for diabetic cookbooks and not good but great recipes. We have to watch the carbohydrates, the calories and the fat. It is a triple whammy finding recipes that include acceptable amounts all three. It has been a challenge, of course I found recipes for meatloaf but very few that would work for diabetics. I searched for traditional meatloaf recipes and I have experimented with ways to adapt them for my diabetic diet restrictions. </span></p>

<p style="line-height: normal;"><span style="font-size: 14.0pt; font-family: Cambria,serif; color: black;">In a sauce pan, saute the onions, veggies and garlic until clear on low to med heat.</span></p>
<p style="line-height: normal;"><span style="font-size: 14.0pt; font-family: Cambria,serif; color: black;">Take out of skillet set aside on paper towel to drain off the oil.</span></p>
<p style="line-height: normal;"><span style="font-size: 14.0pt; font-family: Cambria,serif; color: black;">Spray loaf pan with not stick cooking spray or use non stick loaf pan.</span></p>
<p style="line-height: normal;"><span style="font-size: 14.0pt; font-family: Cambria,serif; color: black;">Mix everything in a big bowl with your hands (get in there and get sticky) add the cooled onions; if mixture looks dry I add more broth or tomato juice at little at a time until the mixture is moist. Not too dry or too moist.</span></p>
<p style="line-height: normal;"><span style="font-size: 14.0pt; font-family: Cambria,serif; color: black;">Pat into loaf pan, cook in a preheated 375 Degree oven for 30 minutes then spread sauce on the top, continue cooking another 10-15 minutes.</span></p>

A generous slice 2-3 inches thick is about 250 calories and 23 carbohydrates The Dietary exchange is about equal to 2 vegetable, 1 starch and 2 lean meat. It varies depending on what vegetables you use.</span></p>

Sometimes I like the meatloaf to have an Italian flavor so I add basil and oregano to the mix and add a little Parmesan cheese to the topping. If you like Middle Eastern spices add some chopped walnuts and top with pomegranate syrup.</span></p>

<p>I have not &nbsp;found the right combination. I was on the pills 3 different times and the side effects were too much. I go back to trying to manage the disease by diet and exercise. Sometimes I fall down on the exercise part or the diet end or both. One of the things that helped me was the Wii Fit system. I can monitor my weight, my bmi and my exercise through the game system. Even when I am really tired&hellip;I turn it on and do the yoga exercises.I found some good ideas in a 10 year old copy of <em>Diabetic Cooking. </em>I have modified some of these and will post soon<em>. </em>I will be posting diabetic recipes&nbsp;and&nbsp;diabetic cookbook&nbsp;listings so stay tuned and lets see where we end up.</p>

As I was diagnosed with Type 2 diabetes about 10 years ago, constantly I have searched for foods that I should eat. Even more frustrating was attempting to find recipes that I could use to cook the right foods. I am not much of a meat eater so the search has been more frustrating to find good recipes for vegetables that keep the carbohydrate content within the targeted range.</span></p>
<p class="MsoNormal" style="mso-margin-top-alt: auto; mso-margin-bottom-alt: auto; line-height: normal;"><span style="font-size: 12.0pt;">I have looked online for information and found it is very frustrating to want to control the disease but not sure, what you are eating is the right thing. I found a few recipes online and few books. I did have a session with the nutritional counselor at my doctor’s office. They were some help but as I said finding good food to eat that met my requirements was challenging.</span></p>
<p class="MsoNormal" style="mso-margin-top-alt: auto; mso-margin-bottom-alt: auto; line-height: normal;"><span style="font-size: 12.0pt;">I want to exchange ideas and help you find cookbooks that will help you cook the right foods. We really cannot eat fast food even the salads at the fast food are too large and many of the dressings contain high fructose corn syrup.</span></p>
<p class="MsoNormal" style="mso-margin-top-alt: auto; mso-margin-bottom-alt: auto; line-height: normal;"><span style="font-size: 12.0pt;">I hope that you will share your ideas and recipes. I plan to run a contest in September the best recipes will be featured on this Blog.</span></p>
